  • 1 cup coconut milk or coconut cream

  • 1 tablespoon lime juice (fresh)

  • 1 tablespoon honey or maple syrup (optional, to taste)

  • 1 cup crushed ice

  • Pineapple wedges and fresh mint (for garnish)

Instructions

  • Combine the pineapple juice, coconut milk, lime juice, and sweetener (if using) in a shaker or blender.

  • Shake or blend until the mixture is smooth and creamy.

  • Fill two glasses halfway with crushed ice.
